STRAWBERRY GAZPACHO

 

Serves 4-6

 

500 g/1 lb fresh strawberries (very ripe)

60 g/2 oz white sugar

100 ml/3 ½ fl oz freshly squeezed orange juice

1 tray of ice cubes (10-12)

Wash the strawberries well under cold running water then remove the stems and chop roughly. Put the strawberries into a large mixing bowl along with the sugar and orange juice, stir and leave to macerate for 10-20 minutes.

Pour the strawberry mixture into a food processor along with the ice cubes and puree until very smooth. Taste for sweetness and add a little more sugar if desired - but remember this is a soup, so don’t make it too sweet.

Push the soup through a fine sieve and serve chilled. Decorate with some edible flower petals if desired.
